There’s a small farm/ranch butcher shop near us that sells beef from its own farm along with other products from nearby similar businesses (cheese, pork, limited produce, butter, eggs). They have a line out the door every Monday (or whatever day it is that they get fresh cuts in) and they sell out of beef by the afternoon. I have only bought the other products because, as much as I like a good steak, I’m not organizing my life around buying one. We also have a few similar butcher shops and other specialty type stores around. We do get a good bit of weekenders out of the cities nearby. People will pay a premium for good beef.
